 Chef Khairul Azmi give an assignment for our subject is Malaysian Cuisine Classes, That we Must Find an utensils use in Malaysian that Malay, Indian and Chinese.A well-equipment cooking best friend either it be the home or restaurant.When I have to pick right kitchen tool,that i feel ease and stay focus on preparing the food.


MALAY'S UTENSIL

Barbecue

In Malaysia, authentic satay chicken skewers are grilled over charcoal flames, but you can make do here by firing up your barbecue. If cooking outdoors isn’t an option, heat a chargrill pan until it’s piping-hot to ensure you get those lovely scorched bits on your satay.

Mortar and pestle

You could use a food processor to grind your spices, but then you’d be missing out on half the fun. For a mouthwatering beef rendang, pound lemongrass, turmeric, galangal, garlic and shallots into a paste. The effort will be rewarded with a richly flavoured rendang – and surely you’ll have burnt off enough calories to go back for seconds!

Clay pot (belanga)


Malaysian cooks coax out the flavours of their soups and stews by simmering them in clay pots, or belanga.

The concept of hot pot is simple. You set a pot of simmering broth on a portable burner in the middle of the table. Around it are plates of meat, seafood, and vegetables, all prepped and ready to be cooked in the broth.

Bamboo Steamer

Bamboo steamer are used for steaming all manner of food: Dim sum, Peking duck pancakes, fish and vegetables. They come in many different sizes and are often used in conjunction with a wok, adapted with a simple metal stand.

Tawa/Flat Pan/Dosa Kallu


Tawa / Flat Pan / Dosa Kallu, made of stainless, aluminium, iron & non stick, comes in different size. The iron / aluminium tawa are very thick and perfect to fry fish, prepare roti & chapati. I have been using nonstick tawa to prepare dosa, oothappam, pancake, half boiled egg, omelet & shallow fried cutlet.

Biryani Vassle

 Biryani Vessel, made from stainless steel, nonstick, indolium, clay, brass, aluminium, etc. It comes in different shapes and sizes. The base is very thick and heat is distributed uniformly.

Tandoor


A tandoor is a cylindrical clay oven used in India and other parts of Southeast Asia in which food is cooked over charcoal or wood. The word tandoor comes from the Hindi words tandūr and tannūr. Traditionally used for baking bread, it is also used for cooking tandoori chicken and bread varieties like tandoori roti and naan.
